Ingredients:

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
1/4 cup onions, chopped
2 (10 ounce) pkgs frozen chopped broccoli
1 (10 ounce) pkg frozen cauliflower
12 ounce pkg of shredded sharp cheddar cheese
salt/pepper to taste
dash paprika

Directions:

1. Preheat oven to 350F or 175C. Butter a 9x13 inch baking dish

2. In a medium mixing bowl, whisk together the condensed soup, mayonnaise, egg, and onions.

3. Place slightly thawed broccoli and cauliflower in a large mixing bowl. Using a spatula, scrape the soup-mayonnaise mixture on top of the veggies and mix well.  Sprinkle 8 ounces of the cheese into the mixture and mix well, add salt and pepper to taste. Spread the mixture into the prepared baking dish, smooth the top and sprinkle the remaing cheese on top, add a dash of paprika.

4. Bake for 45-60 minutes, let stand 5 minutes before serving.

5. Makes 8 servings

That sounds yummy apart from one thing, the can of mushroom soup (I love mushrooms, but hate mushroom soup!!) Is there anything I could use apart from that??? Any suggestions??

You might want to try cream of broccoli soup, although you can't really taste the soup in the recipe.
